- FERMENTATION: Fermented with native wild yeast in small, stainless steel tanks, maceration takes about 20 days after alcoholic fermentation is complete.
- AGING: Each varietal of wine is aged separated for 14 months in oak barrels with the exception of Rebo; the Rebo is aged in“Terracotta Orcio”, a traditional Tuscan clay vessel. The wine is finally blended just before bottling and then aged for an additional 10 months before release.
